Caterpillar Potato Croquettes

Ingredients
For the Caterpillar Potato Croquettes
- 450g chilled ready made mashed potato
- 50g grated mature Cheddar cheese
- 50g wafer thin ham cut into strips
- 1 to 2 tablespoons flour
- 1 egg, lightly beaten
- 65g breadcrumbs
- oil for frying
- olive oil for brushing
- peppe r
- stoned black olive
For the Decoration
- Cucumber
- Red pepper
- Carrot
- Frozen peas
- Gem lettuce
- Baby sweet corn
Method
- Mix the ham and cheese together and devide into eight small portions.
- Lightly squeeze each portion into a ball and wrap the chilled mashed potato around the filling using your hands to mould into a croquette.
- Roll the croquettes in flour, dip in the beaten egg and then coat in the breadcrumbs. Chill for at least one hour in the fridge to firm up.
- Heat the oil n a frying pan and fry the croquettes for about 3 minutes, turning occacionally until golden.
- Arrange two croquettes on each serving olate. Decorate with thin strips of cucumber for the legs and small pieces of red pepper for the feet. Make auennae using thin strips of carrot and peas and use a small strip of cumber for the nose.
- Take a leaf from the gem lettuce and cut out shapes from a large carrot using a small pastry cutter and add a circle of baby sweet corn in the centre to make flowers.
