Hash Brown Frittata

Serves: 4

Ingredients 

  • 1 x 500g pack Frozen hash browns
  • 4 large Eggs, beaten
  • 1 tbsp Milk
  • Salt and freshly ground black pepper
  • 2 slices Ham, chopped
  • 1 Tomato chopped
  • 25g (1oz) Cheese, grated

Method:

  1. Arrange the hash browns around the edge of a square or oblong shallow ovenproof dish and place in the preheated oven for 10 minutes.
  2. Meanwhile beat the eggs and milk together and season well. Add the ham, tomato and cheese.
  3. After 10 minutes rearrange the hash browns so that they line the edge of the dish, slightly overlapping if necessary. Pour the egg mixture into the centre.
  4. Return to the oven and cook for 10 -15 minutes or until the has browns are crisp and golden and the egg mixture is set.
