750g peeled potatoes
175ml (1/4 pint) milk
1 yellow pepper
1 red pepper
Handful of Pitted black olives
olive oil
thyme leaves
Cut the peeled potatoes into even sized chunks and place into a pan, cover with boiling water, add a little salt, cover and simmer for 15-20 minutes or until tender.
Whilst the potatoes are cooking, grill 2 or 3 red and yellow peppers until blackened, cover and when cool enough to handle skin and slice.
Drain the potatoes, return to the pan and push to on side.
Add 175ml milk (1/4 pint) and heat gently until the milk is almost boiling.
Remove from the heat, season and mash until smooth.
Top the mash with the peppers and a handful of pitted black olives. Drizzle over some olive oil and serve immediately, garnished with thyme leaves.
