Woolton Pie

As featured on BBC Breakfast (19th June 2008) This recipe was named after Lord Woolton, the Minister for Food during World War II. There was another version with a wholemeal pastry crust. Ivan Day has also rediscovered this traditional British potato recipe for Potato & Lemon Cheesecakes

Ingredients

  • 3lbs potatoes
  • 1lb cauliflower
  • 1lb swede
  • 1lb carrots
  • 4 spring onions
  • A sprig of parsley
  • 1 teaspoon of Marmite or vegetable extract
  • 1 teaspoon of fine oatmeal
  • Salt to taste

Method

  1. Preheat the oven to 200oC, Gas Mark 6.
  2. Peel and boil 2ibs of the potatoes in salted water and make them into mashed potato.
  3. Meanwhile peel and dice the rest of the potatoes and the other vegetables. Cover with water and stir in the vegetable extract and oatmeal.
  4. Gently simmer for 15 minutes, stirring frequently to prevent the vegetables and oatmeal from sticking.
  5. Transfer to a pie dish, sprinkle with chopped parsley. Cover with the mashed potato and bake for 25 minutes in a hot oven or until the potato covering is nicely brown.
