Pesto New Potatoes

Serves: 4

Ingredients

  • 500g British new potatoes, scrubbed (halved or quartered if necessary)
  • 2-3 tsp pesto
  • Salt and freshly ground black pepper
  • 25g parmesan, coarsely grated

Method:

  1. Place the potatoes in a pan of lightly salted boiling water.
  2. Cover and simmer for 15 minutes or until tender.
  3. Drain and allow to cool slightly
  4. Toss the drained potatoes in the pesto, season to taste and serve immediately garnished with the parmesan

Or Spicy New Potato Salad:

Substitute 1 tsp harissa paste mixed with 1 tbsp olive oil for the pesto and garnish with a handful of roughly chopped fresh mint.

Or  New Potato and Onion Salad:

Substitute 1-2 tbsp balsamic vinegar for the pesto and add half a red onion, finely chopped and 2 finely sliced spring onions, garnish with fresh thyme leaves.
