Redcurrant Lamb With Mustard And Thyme Mash

Ingredients

  • 500g floury potatoes e.g. Desiree, peeled and cut into equal sized chunks
  • 3 tbsp hot milk
  • Salt and pepper
  • Knob of butter
  • 3 tbsp crème fraîche
  • 1 tsp freshly chopped thyme
  • 1 tsp wholegrain mustard
  • 1 tbsp olive oil
  • 2 lamb leg steaks
  • 75g mushrooms, sliced
  • 2 tbsp redcurrant jelly
  • ½ small bag rocket salad

Method

  1. Place the potatoes in a pan, cover with boiling water, add a little salt, cover and simmer for 15-20 minutes or until tender.  Drain and return to the pan.  Mash with the milk, seasoning, butter, crème fraîche, thyme and mustard.
  2. Meanwhile, heat the oil in a frying pan and fry the steaks for 3-4 minutes on each side (or to your liking).  Add the mushrooms to the pan and fry for a further 2-3 minutes.  Add the redcurrant jelly and cook until reduced by half.
  3. Divide the rocket between 2 plates and top with the mash.  Place the steaks on top of the mash and pour over the mushrooms with any remaining pan juices.

TIP:

If you are really short of time, use ready prepared mash potato.
