Salmon with Parmesan Potatoes

Ingredients

  • 700g (1_lb British new potatoes
  • 4 salmon fillets
  • 4 tsp olive oil
  • Salt & freshly ground black pepper
  • Juice _ lemon
  • 250g (9oz) leeks, trimmed & thinly sliced
  • 1 clove garlic, crushed
  • 25g (1oz) Parmesan cheese, grated

Method

  1. Put the potatoes in a pan with lightly salted boiling water and cook for 10 – 12 minutes, until just tender. Drain and cut in half.
  2. Meanwhile, brush the salmon fillets wit ha teaspoon of the oil and place, skin side down on a foil lined grill rack. Season with salt & pepper and sprinkle over the lemon juice.
  3. Put the salmon to cook under a medium high heat for 8-10 minutes, depending on the thickness of the fillets
  4. Heat the rest of the oil in a heavy large frying pan, add the potatoes and sautÈ on medium high heat for 5 minutes. Add the leeks and garlic and continue to sautÈ for a further 5 minutes, by which time the potatoes should be golden brown. Remove from the heat and mix in the cheese, season to taste.
  5. Spoon the potatoes onto a serving plate, serve with the salmon
