Salsa Jacket Potatoes

Ingredients
- 2 x 225g (8oz) Potatoes, scrubbed
- 4 tbsp Salsa relish plus extra for dipping
- 50g (1 3/4oz) Cheddar cheese or mozzarella, sliced or grated
- Crisps for dipping
Method (microwave)*:
- Prick the potatoes all over and place in the microwave for 10-15 minutes or untilsoft throughout.
- When the potatoes are cooked cut them almost in half lengthways, spoon in the salsa relish, top with the cheese and serve. Or place under a preheated grill for 2-3minutes until the cheese is melted.
- Serve accompanied with the crisps and a side salad.
* If you prefer cook the potatoes in a conventional oven at 200C, 400F, gas mark 6 for 1º hours or until soft throughout.
