Smoked Mackerel And Potato Salad

Ingredients
- 350G (12oz) British new potatoes, scrubbed and halved
- 250g (9oz) Cornish smoked mackerel (cooked), skinned and flaked
- 8 Cherry tomatoes
- 1 Bunch spring onions, sliced
Dressing
- 3 x 15ml spn (3 tblspn) Olive oil
- 1 x 15ml spn ( 1 tblspn) Cider vinegar
- 1 x 15ml spn ( 1 tblspn) Creamed horseradish
- Salt & freshly ground black pepper
Method
- Place the potatoes in a pan of boiling water, cover and simmer for 20 minutes or until tender. Drain and leave to cool slightly.
- Place all the dressing ingredients into a screw top jar, shake well and pour over the potatoes.
- Combine the mackerel, tomatoes and spring onions in a large bowl, add the potatoes and the remaining dressing. Serve immediately.
