Weekday Wedges

Serves: 4

Ingredients 

  • 1 x 500g pack Frozen potato wedges
  • 4 Boneless chicken breasts, skinned and cut into quarters
  • 8 rashers British bacon, stretched and halved
  • 1 Onion, cut into wedges
  • 1 tsp Oil
  • Salt and freshly ground black pepper

Method:

  1. Arrange the potato wedges in a large, shallow ovenproof dish or roasting tray.
  2. Wrap each piece of chicken in a halved bacon rasher and add to the dish with the wedges.
  3. Toss the onion in the oil and place in the dish with the wedges and chicken. Season.
  4. Cook for 25 minutes or until the chicken is cooked and the wedges are golden brown and crispy.
